Light and Easy Banana Walnut Muffins


So I've finally gotten around to baking again. I actually quite enjoy baking, but I don't always have the opportunity to photograph the finished product. I've made these muffins many times before, and they're always a favourite. You can also add chocolate chips to the recipe if you like your muffins a bit sweeter :)

Recipe from James St Cooking School.

Ingredients
1 ½ cups plain flour
1 cup castor sugar
1 pinch salt
½ tsp baking powder
½ tsp bicarbonate of soda
tsp cinnamon
4 egg whites
3 large ripe bananas (about 1 cup)
½ cup light olive oil
¼ cup low fat yoghurt
¼ cup roughly chopped walnuts


Preheat your oven to 190°C. Sift the dry ingredients into a mixing bowl.
Whisk the egg whites with a fork until slightly frothy, and add to dry ingredients.
Stir in banana, oil, yoghurt and nuts and mix lightly until combined.
Spoon the mixture into the tins.
Bake for approximately 20 minutes or until golden and firm to touch on top.
Transfer to a wire rack to cool.

Eat warm with a cold glass of milk on the side ;)
